– 2–3 egg – ¼ tsp turmeric powder – ½ tsp red chili powder – Salt, to taste – ½ tsp garam masala – 1–2 tbsp milk or water – 2 tbsp fresh mint leaves, chopped (spring twist!) – 1 tsp oil or ghee (for cooking) FINELY CHOPPED – 1 small red onion, – 1 small tomato, – 1 green chili, – 2 tbsp fresh coriander
Whisk the eggs in a bowl with salt, turmeric, red chili powder, garam masala, and milk/water. Beat until frothy.
